Choco Peanut Butter Keto Collagen  Balls

Happy New Year Friends and Happy Foodie Friday!!! 2020! Can you believe it!?! If you are like us you are feeling motivated to use this milestone year to get healthier, stronger, and live longer!

Over the past couple days we have discussed several intentions to improve our health habits for 2020. One of our favorite ways to reset our eating each year is through a 21 Day Primal Reset!! During the reset if we get a hankering for something sweet this is one of our favorite treats. I invented these keto collagen balls a few months back, and its something the whole family enjoys. There are several flavors I have experimented with such as birthday cake, lemon, chocolate coconut, and more. They are super yummy and an easy way to get some healthy fat, enriching collagen, and kick a sweet tooth with out any guilt. Here is the recipe for Brendan’s personal favorite – for all you peanut butter lovers out there! Hope you enjoy!

Choco Peanut Butter Keto Collagen Balls

Ingredients

  • 2 cups raw nut of choice I usually use macadamia nuts, pistachios, walnuts, or cashews (or a combo) depending on what i have on hand
  • 1 scoop peanut butter collagen powder I used primal kitchen brand
  • 3 tsp unsweetened cocoa powder
  • 2 tsp vanilla extract
  • 1 tsp salt omit the salt if you use salted nuts

Instructions

  1. Blend all ingredients in a food processor until smooth. (We use Primal Kitchen brand collagen, which is sugar free) It should be slightly drier than the consistency of peanut butter but smooth enough to roll into balls. Shape the dough into balls. Place flat in the freezer for about 15-20 minutes to set into ball shape. Store in refrigerator.

    Optional: once set, you can roll the balls in a mixture of half cocoa powder / half granulated monk fruit sweetner (such as Swerve) to lightly coat.

    There are so many ways to mix up this recipe. If you want a more chocolate swap out the peanut butter collagen for a chocolate version. I also love to roll the balls in unsweeteed shredded coconut.
