Blend all ingredients in a food processor until smooth. (We use Primal Kitchen brand collagen, which is sugar free) It should be slightly drier than the consistency of peanut butter but smooth enough to roll into balls. Shape the dough into balls. Place flat in the freezer for about 15-20 minutes to set into ball shape. Store in refrigerator.
Optional: once set, you can roll the balls in a mixture of half cocoa powder / half granulated monk fruit sweetner (such as Swerve) to lightly coat.
There are so many ways to mix up this recipe. If you want a more chocolate swap out the peanut butter collagen for a chocolate version. I also love to roll the balls in unsweeteed shredded coconut.
