My Grandma Mary is easily one of the most inspiring, kind, special and wise women on this planet. Gram also makes amazing ‘angel’ed eggs – her classic version of deviled eggs except she has always changed the name to make it a more joyful sounding food. We always opt to use angel as well.
I love to experiment with different ways to fill the eggs and have found several fun options – but this one is by far our favorite.

Eggs, Guacamole, and Bacon are 3 of our favorite foods, so why not have them all together in one awesome bite?!?! I love to make this easy appetizer to bring to parties. They can be made ahead of time and travel well. They also keep for a few days in the fridge, so I usually make extra to have on hand for an easy to grab snack. The kids love them in their lunches as well.

Bacon Guacamole Angel-ed Eggs

Bacon. Gucamole. Eggs. All in One. An awesome spin on a classic appetizer.

This recipe makes 12 angel-ed eggs.

Ingredients

  • 6 hard boiled eggs
  • 2 slices thick cut bacon (of course make extra for snacking while cooking)
  • 2 avocados smashed
  • 2 tbsp chopped cilantro
  • 2-3 tbsp diced tomatoes
  • 1 squirt of fresh lime juice
  • 1 tbsp chopped red onion
  • 1 dash of chili powder
  • 1 tbsp lemon pepper
  • salt and pepper to taste

Instructions

  1. Boil the eggs, cool, and peel

  2. Slice eggs legthwise, set the whites aside, place yolks in a mixing bowl and mash with a fork

  3. Scoop the avocado into the bowl with the egg yolks. Mash the avocado into the yolks. Mix in the onion, cilantro, lime juice, lemon pepper, chili powder and salt. Taste the filling and adjust the seasoning to your taste. Add the diced tomatoes and mix. If you have a favorite guacamole recipe feel free to alter this part. Sometimes I add cumin. Also, you don't have to use all the egg yolks, but i usually do.

  4. Spoon the filling into the egg whites and top with 1/3 piece of bacon.

These suckers go fast, so I usually make a double recipe.  Enjoy!!!!
