Primal Instant Pot Chili

The temp finally dropped here in Florida!! So what does a Florida girl do when “cold” weather finally arrives?  Put on a pair of cute boots and make some Primal Approved Chili, of course.  If you don’t already have an Instant Pot, we highly recommend it.  (So many great recipes out there.) It makes planning and cooking so much easier. If you don’t have one yet, don’t worry, you can totally adapt this recipe and make it in your crock pot or on the stovetop. We have experimented with our bean free chili recipe over the years and this one is our favorite.  We have to give credit to Nom Nom Paleo for giving us a lots of inspiration to perfect the OHH Primal Instant Pot Chili Recipe.   This recipe is awesome for chilly nights (pun intended), football Saturdays, and dipping with grain free chips.

Primal Instant Pot Chili

You won't miss the beans, you'll just wish you had made a double batch of this cold weather, guilt free comfort food.  

Ingredients

  • 1 pound ground beef
  • 1 pound ground bison optional (can do 2 pounds ground beef)
  • 3+ Garlic cloves crushed
  • 1 can fire roasted tomatoes, drained
  • 1-3 tbsp tomato paste
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 2-3 tbsp chili powder
  • 1 tbsp cumin
  • 1/2 tsp cayenne pepper
  • 1/2 cup red wine or bone broth
  • 2 tsp fish sauce

Instructions

  1. Press the sauté button on the Instant Pot.  Add 1 tablespoon of oil or ghee. Once heated, add in onion and pepper and cook for a few minutes until soft.  

  2. Stir in the tomato paste and minced garlic and cook another minute.

  3. Add in the ground meat and brown for about 5 minutes until no longer pink.  

  4. Stir in the chili powder, oregano, cumin, and cayenne pepper (optional).    

  5. Add the drained diced tomatoes, broth, and fish sauce. Stir well. 

  6. Lock the Instant pot lid, press the “Manual” button and cook for 15 minutes under high pressure.

  7. Let the pressure come down naturally (or feel free to release the pressure after the 15 minutes if you're in a rush).  I like to make this in the morning and let it sit for the day to let the flavors marinade - but this is not necessary and will still taste amazing if done in 15 minutes! 

  8. Taste and add salt or extra spices as needed. 

  9. Serve with your favorite chili toppings.  (We love red onion, cilantro, avocado, and radishes!! ). 

  10. Don't have an instant Pot?  Don't fret, you can use the same idea to cook in a crockpot or stovetop.
