Football Season is in full force and we couldn’t be happier.  There is so much to love about football Saturdays: great games, delicious food and Fall weather.  Tailgate foods aren’t typically the most health friendly, but it doesn’t have to be that way.   Last weekend Brendan slow cooked an amazing pork shoulder on the Big Green Egg, and of course nothing compliments pork like coleslaw and pickles.  When I posted a picture of my daughter and I whipping up our favorite keto coleslaw, I got lots of requests for the recipe.  I credit Mark Sisson’s keto coleslaw recipe as my inspiration for this one, but have modified quite a bit to match our tastes and simplify the recipe. It goes great with any barbecue including pork, ribs, and burgers!!

Football Season Keto Coleslaw

Ingredients

  • 1/2 cup primal friendly mayo I use primal kitchen brand
  • 2 tbsp brown mustard dijon mustard would work too
  • 2 tsp horseradish optional
  • 2-3 tbsp dill relish
  • 1/2 tbsp celery seed
  • 2 tbsp apple cider vinegar I use Braggs
  • 1 bag coleslaw mix I use one that has purple and green cabbage already mixed with carrots carrots all premixed
  • 1-2 cups chopped cilantro
  • 1 cup cherry tomatoes halved (optional if your in a strict keto phase)
  • 3 green onions chopped
  • salt and pepper to taste

Instructions

  1. Veggies: I start by chopping up the coleslaw mix. I know its already chopped, but the flavors come together so much nicer if its chopped up fine.  Place in a large bowl. Add in cilantro and green onions.

    Dressing: Mix mayo, mustard, apple cider vinegar, horseradish, celery seed, and relish in a medium bowl. Pour dressing over veggies and toss to fully coat. Salt and pepper to taste. 

    I usually make this about an hour or so before eating to let the flavors blend.  This coleslaw is awesome with BBQ and so much more!  Enjoy!!
