Bacon Broccoli Salad

This is one of my favorite recipes both on a weeknight and also to bring to parties. It goes with everything, the kids love it, and -well- it has bacon. Enough said.

Bacon Broccoli Salad
This salad is one of my favorite recipes both on a weeknight and also to bring to parties. It goes with everything and -well- it has bacon. Enough said.
Ingredients
- 4-6 strips bacon cooked and chopped
- 1 head broccoli
- 1 medium red onion, chopped
- 1 cup cherry tomatos, halved
- 1/3 cup avocado mayo
- 2 tbsp apple cider vinegar
- 1 pack stevia (optional)
- salt and pepper to taste
Instructions

Wash broccoli and cut into small bite size pieces

In a large bowl combine broccoli, and tomatoes

Pan fry the bacon and set aside

Turn off heat and remove most of the excess bacon grease from your pan. Use the remaining grease in pan to coat and flash fry the red onion. This step should only take a minute – onion should still be crisp. This step is also optional – but it adds a great smokey flavor!

Chop the bagon and add to the bowl along with red onion

In a small bowl whisk together mayo, vinegar, salt, pepper, and stevia (if using).

Add dressing to the salad and stir well to coat the broccoli.

Recipe Notes
I love to serve this salad with my air fryer chicken thighs or grilled salmon.
I like to use this mayo. This chipotle lime mayo works amazing in this salad too.
Honestly, 4 slices of bacon in plenty for this recipe – but in our house I have to throw extra slices in the pan for my little “bacon taste testers”.
