Crispy Cajun Cast Iron Shrimp

Crunchy, spicy, and packed with flavor. This crispy shrimp dish uses simple ingredients and can be served in so many ways. Try serving these over cauliflower rice or in romaine lettuce boats for a shrimp taco.

Ingredients

  • 1/4 cup olive oil or coconut oil
  • 2 tbsp Cajun seasoning
  • 2 tbsp fresh lemon juice
  • 1/2 tsp cayenne pepper (optional)
  • 1 pound uncooked large shrimp shelled and deveined
  • 1/4 cup grain free breading mix of choice
  • 2 tbsp fresh chopped parsley

Instructions

  1. Combine oil, cajun seasoning, lemon juice, and cayenee pepper in a large bowl.

  2. Add shrimp and toss to coat.

  3. Refrigerate for 1-2 hours, optional.

  4. Spread primal friendly breading mix (I like this one) on a plate.

  5. Heat large cast iron skillet with 1 tbsp of olive oil.

  6. Lightly roll shrimp in breading mix and immediately add to skillet. Try not ot overcrowd the pan so that the shrimp stay crispy.

  7. Cook the shrimp over meduim high heat until just cooked, about 2-3 minutes per side. 

  8. Remove from heat and sprinkle with parsley. Serve over cauliflower rice or make a shrimp taco feast. ENJOY!
