Primal Bolognese Sauce

One of my favorite cool weather comfort foods is this meaty bolognese sauce. I love to simmer this it in my dutch oven so I can enjoy the smell all day. Serve over zoodles or miracle noodles and a side of cesar salad. Perfect primal meal!

Ingredients

  • 1 pound ground pork
  • 1 pound ground beef
  • 2 tbsp olive oil
  • 1 onion chopped
  • 5 cloves garlic chopped (more or less to perference)
  • 1/4 cup carrots chopped
  • 1/4 cup celery chopped (optional)
  • 2 tbsp tomato paste
  • 2 tbsp dried basil
  • 2 tbsp dried oregano
  • 2 tsp salt
  • 2 tsp coarse black pepper
  • 28 oz can 1 can crushed tomatoes san marzano are the best
  • 1 can fire roasted tomatoes
  • 2 bay leaves
  • 2 tbsp fresh chopped basil
  • 1 cup red wine (optional)

Instructions

  1. In a dutch oven or large pot, heat olive oil over medium heat.

  2. Add onion, carrots and celery. Cook, stirring occasionally, until onions are translucent about 5 minutes.

  3. Add ground meat and cook it until it’s browned about 7 minutes. 

  4. Stir in garlic, tomato paste, dried basil, dried oregano, salt and black pepper. 

  5. Stir in wine scraping any browned bits from the bottom of the pot. 

  6. Stir in tomatoes and bay leaves. 

  7. Simmer uncovered for 30-45 minutes. Then cover and simmer until ready to serve. Stir occasionally with a wooden spoon (only because that's how my mom taught me!).

  8. Spoon sauce over primal noodles of choice.

  9. Garnish with fresh chopped basil and ENJOY!!

Recipe Notes

This recipe could easily be made in an instant pot using the same steps with the saute mode first and then manual, high pressure, sealed mode for 20 minutes.  

I love the combination of grass fed ground beef and pasture raised pork.  But you certainly could use all beef or ground chicken for a leaner option.  

Oh and the key to a good sauce is lots of taste testing and adjusting as needed!!
