Bacon. Gucamole. Eggs. All in One. An awesome spin on a classic appetizer.
This recipe makes 12 angel-ed eggs.
Boil the eggs, cool, and peel
Slice eggs legthwise, set the whites aside, place yolks in a mixing bowl and mash with a fork
Scoop the avocado into the bowl with the egg yolks. Mash the avocado into the yolks. Mix in the onion, cilantro, lime juice, lemon pepper, chili powder and salt. Taste the filling and adjust the seasoning to your taste. Add the diced tomatoes and mix. If you have a favorite guacamole recipe feel free to alter this part. Sometimes I add cumin. Also, you don't have to use all the egg yolks, but i usually do.
Spoon the filling into the egg whites and top with 1/3 piece of bacon.
These suckers go fast, so I usually make a double recipe. Enjoy!!!!
